This grilled lemon herb chicken is one of my favorite go to recipes when I want something healthy and filling. The marinade keeps the meat juicy while the fresh herbs add a lovely brightness that everyone at the dinner table seems to enjoy.

Since this dish is so versatile, I recommend making an extra batch to keep in the fridge for lunches during the week. It pairs wonderfully with a side of steamed veggies or a crisp garden salad.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, salt, and pepper.

    Place the chicken breasts in a large resealable bag and pour the marinade over them. Seal the bag and massage it gently so the chicken is well coated.

    Let the chicken rest in the refrigerator for at least 30 minutes, or up to 4 hours if you have the time.

    Preheat your grill to medium high heat and lightly oil the grates.

    Place the chicken on the grill and cook for 6 to 8 minutes per side, or until the juices run clear and the internal temperature reaches 165 degrees.

    Remove the chicken from the grill and let it rest on a cutting board for 5 minutes before slicing and serving.

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this warm right off the grill or slice it cold to add on top of your favorite salad for a quick high protein lunch.
