There is nothing quite like the smell of fresh cornbread baking in the oven. This recipe is a total favorite in my kitchen because it comes together so fast and results in a golden, buttery slice every single time.

My best tip for success is to make sure your milk and eggs are at room temperature before you start. This helps the batter mix evenly and gives you a much lighter texture when the bread is finished baking.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1 large egg
  • 1/4 cup vegetable oil or melted butter

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and grease an 8 inch square baking pan.

  2. 2

In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. 3

Add the milk, egg, and oil to the dry ingredients and stir until just combined.

  4. 4

Pour the batter into your prepared pan and spread it out evenly.

  5. 5

Bake for 20 to 25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

  6. 6

Let it cool for a few minutes before slicing and serving warm.

๐Ÿ’ก Tips

Store any leftovers in an airtight container at room temperature for up to two days. You can also wrap individual slices in foil and freeze them for a quick breakfast later on. Serve this warm with a generous slab of salted butter or a drizzle of honey.
