There is something so satisfying about a golden, juicy roasted chicken sitting on the dinner table. It is the kind of meal that fills the house with a delicious aroma and brings everyone together without much fuss in the kitchen.

I love serving this because the leftovers are just as good as the first meal. My best tip is to let the chicken rest for at least ten minutes before carving so all those wonderful juices stay right where they belong.

Ingredients

  • 1 whole roasting chicken, about 4 pounds
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved

    Preheat your oven to 425 degrees Fahrenheit.

    Pat the chicken dry with paper towels to ensure the skin gets nice and crispy.

    In a small bowl, mix the olive oil, lemon juice, garlic, rosemary, salt, and pepper.

    Rub the mixture all over the chicken, including under the skin of the breast area.

    Place the lemon halves inside the cavity of the chicken.

    Roast for about 60 to 75 minutes, or until the juices run clear and an instant read thermometer reaches 165 degrees Fahrenheit.

Store any leftovers in an airtight container in the fridge for up to three days. You can shred the cold meat for quick salads or wraps the next day. If you want a complete meal, roast some carrots and potatoes in the same pan while the chicken cooks.
