This tuna pasta is a lifesaver when you need dinner on the table in a hurry. It relies on ingredients you likely already have in your kitchen, like canned tuna, pasta, and flavorful sun dried tomatoes, to create a meal that feels special without any fuss.

I love how the lemony herb oil ties everything together to make the tuna taste fresh and light. If you want a little extra zing, feel free to add a pinch of red pepper flakes right at the end.

Ingredients

  • 12 ounces spaghetti
  • 2 cans tuna in olive oil, drained
  • 1/2 cup sun dried tomatoes, chopped
  • 2 tablespoons capers, drained
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente.

  2. 2

While the pasta cooks, whisk the olive oil, lemon juice, lemon zest, and parsley together in a small bowl to create your dressing.

  3. 3

Reserve a half cup of the pasta water, then drain the spaghetti and return it to the pot.

  4. 4

Add the tuna, chopped sun dried tomatoes, capers, and the lemon herb dressing to the pasta.

  5. 5

Toss everything gently over low heat, adding a splash of the reserved pasta water if the dish looks a bit dry.

  6. 6

Season with salt and pepper to taste and serve immediately while warm.

๐Ÿ’ก Tips

Leftovers keep well in the fridge for up to two days in an airtight container. If the pasta absorbs the oil, simply drizzle in a little extra olive oil and a squeeze of fresh lemon juice before reheating. This dish is great served with a side of steamed broccoli or a crisp green salad.
