I love how the chicken juices soak into the potatoes and carrots as they roast together in the oven. My best tip is to cut your potatoes into uniform pieces so they all finish cooking at the same time and get nice and golden on the edges.

Ingredients

  • 4 chicken thighs, bone in and skin on
  • 1 pound baby potatoes, halved
  • 3 large carrots, peeled and sliced into rounds
  • 1 yellow onion, cut into thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish
