Simple Oven Roasted Beets
These roasted beets are sweet and earthy, making them the perfect addition to any meal.

I love keeping a batch of these in my fridge throughout the week. They are great tossed into a fresh salad or even served on their own as a quick side dish. If you find the skins are a bit tough after roasting, they will slide right off with a paper towel.
Ingredients
- 4 to 6 medium beets
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Optional: fresh herbs like thyme or rosemary

Preheat your oven to 400 degrees Fahrenheit.

Wash the beets well under cool water to remove any dirt, then trim off the leafy tops and the long root end.

Place the beets on a large piece of aluminum foil and drizzle them with olive oil, salt, and pepper.

Fold the foil up to create a sealed packet so the steam stays inside while they roast.

Place the packet on a baking sheet and roast for 45 to 60 minutes, or until a fork slides into the center with no resistance.

Let the beets cool slightly before you gently rub off the skins with a paper towel, then slice or dice them as you like.

Store these in an airtight container in your fridge for up to five days. You can serve them warm with a sprinkle of feta cheese or chilled on top of a bed of arugula with a simple balsamic vinaigrette.
