Tofu is a wonderful ingredient that soaks up all the flavors you add to it. Many people think it is just a meat substitute, but when prepared correctly, it becomes a delicious star on your dinner plate.

My favorite way to cook tofu is to get a nice crispy crust on the outside while keeping the inside soft. If you want the best results, remember to press the excess water out of the block before you start cooking.

Ingredients

  • 1 block extra firm tofu
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon grated fresh ginger
  • Sliced green onions for garnish

Instructions

    Remove the tofu from the package and wrap it in a clean kitchen towel. Place a heavy plate or skillet on top for 15 minutes to press out extra water.

    Cut the tofu into one inch cubes after it has been pressed.

    Place the cornstarch in a shallow bowl and gently toss the tofu cubes in it until they are lightly coated.

    Heat the oil in a large skillet over medium heat.

    Add the tofu cubes to the pan in a single layer and cook for 3 to 4 minutes per side until they turn golden brown and crispy.

    Whisk the soy sauce, mirin, and ginger together in a small bowl.

    Pour the sauce over the tofu in the pan and toss quickly for 30 seconds to coat each piece.

    Remove from the heat and sprinkle with green onions before serving.

Serve this dish immediately while the tofu is still crispy. If you have leftovers, store them in an airtight container in the fridge for up to two days, though the texture will be softer when reheated.
