Simple Pickled Red Onions
These quick pickled red onions add a bright crunch and tangy pop of flavor to just about any meal.
dailyrecipesbook.comThere is something so satisfying about having a jar of bright pink pickled onions in the fridge. They are the perfect way to add a bit of acidity to tacos, sandwiches, or salads, and they take very little effort to pull together.
I love using a mandoline slicer to get the onions nice and thin, which helps them soak up the brine quickly. If you want them to be extra pretty, let them sit for at least an hour before serving to watch the color transform into a vibrant fuchsia.
Ingredients
- 1 large red onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup warm water
Instructions
- 1
Pack the thinly sliced red onions into a clean glass jar or container.
- 2
In a small bowl, whisk together the apple cider vinegar, sugar, salt, and warm water until the sugar and salt are completely dissolved.
- 3
Pour the vinegar mixture over the onions, making sure they are fully submerged.
- 4
Cover the jar and let the onions sit at room temperature for about one hour.
- 5
Place the jar in the refrigerator to chill before serving.
๐ก Tips
These keep well in the refrigerator for up to two weeks. I suggest using a glass jar to prevent the vinegar from picking up any plastic flavors. They are delicious on top of burgers, avocado toast, or grain bowls.
