There is something truly comforting about the combination of pumpkin and warm spices when the weather begins to cool down. These cheesecake bars are a favorite because they are much easier to slice and share than a traditional round pie.

My best tip for success is to make sure your cream cheese is at room temperature before you start mixing. This ensures that your filling becomes perfectly smooth without any lumps.

Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 1/3 cup sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.

  2. 2

Mix the graham cracker crumbs, melted butter, and sugar in a bowl until combined, then press the mixture firmly into the bottom of your prepared pan.

  3. 3

Bake the crust for 10 minutes, then set it aside to cool slightly.

  4. 4

In a large bowl, beat the cream cheese and sugar together until the mixture is smooth and creamy.

  5. 5

Add the pumpkin puree, eggs, vanilla extract, and pumpkin pie spice to the bowl and mix on low speed until everything is well combined.

  6. 6

Pour the pumpkin filling over your prepared crust and smooth the top with a spatula.

  7. 7

Bake for 35 to 40 minutes or until the center is set but still has a slight jiggle.

  8. 8

Let the bars cool to room temperature, then place them in the refrigerator for at least 3 hours before slicing and serving.

๐Ÿ’ก Tips

Store these bars in an airtight container in the refrigerator for up to five days. They taste even better the next day once the spices have had time to settle. Serve with a dollop of fresh whipped cream on top.
