Simple Roasted Cabbage Wedges

Remove any wilted outer leaves from the cabbage and cut the head into thick wedges, keeping the core intact so the leaves hold together.

Brush both sides of each wedge with olive oil and sprinkle evenly with garlic powder, salt, and pepper.

Roast for 25 to 30 minutes, flipping them halfway through, until the edges are nicely browned and tender.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in a hot skillet for a few minutes to regain some of that crispy texture. It is delicious topped with a little grated parmesan cheese or some toasted pine nuts.
