The best part is how easy they are to make with just a few pantry staples. If you want a bit more flavor, try adding some fresh garlic cloves or a pinch of red pepper flakes to the pan while they roast.

Ingredients

  • 2 pints cherry or grape tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or rosemary

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Wash the tomatoes and pat them dry with a clean kitchen towel so they roast properly instead of steaming.
