There is nothing quite like the smell of a home cooked roast chicken drifting through the kitchen. It is a reliable favorite that tastes great and keeps everyone happy at the dinner table.

My best advice is to pat the skin dry with paper towels before you add the seasoning. This little step is the secret to getting that perfect golden color we all love.

Ingredients

  • 1 whole chicken about 4 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lemons halved
  • 4 cloves garlic smashed

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels and place it in a large roasting pan.

  3. 3

Rub the olive oil all over the chicken skin.

  4. 4

Mix the rosemary, thyme, salt, and pepper in a small bowl and sprinkle it evenly over the bird.

  5. 5

Stuff the lemon halves and smashed garlic inside the cavity of the chicken.

  6. 6

Roast for about 75 minutes or until the internal temperature reaches 165 degrees Fahrenheit.

  7. 7

Let the chicken rest for 15 minutes before carving so the juices stay inside.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can shred the cold meat to put on top of salads for a quick lunch the next day.
