Whenever I am planning my meals for the week, I always make a batch of this shredded chicken first. It is incredibly simple to prepare and having it ready in the fridge saves me so much time during busy evenings.

My biggest tip is to shred the chicken while it is still warm. It pulls apart much easier when it has not fully cooled down yet, and it absorbs all those lovely juices from the pan for better flavor.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup chicken broth

Instructions

    Heat the olive oil in a large skillet or pot over medium heat.

    Season the chicken breasts evenly with the salt, pepper, garlic powder, and onion powder.

    Place the chicken in the skillet and brown it for about 3 minutes on each side.

    Pour the chicken broth into the pan and bring the liquid to a gentle simmer.

    Cover the pan with a lid and let the chicken cook for 15 minutes or until it is cooked through and tender.

    Remove the chicken from the pan and place it on a cutting board or in a large bowl.

    Use two forks to pull the meat apart into shreds.

    Toss the shredded meat back into the pan with the remaining juices to keep it moist before serving.

Store your shredded chicken in an airtight container in the fridge for up to four days. You can also freeze it in freezer bags for up to three months. It is delicious tossed into pasta, piled onto toasted buns, or added to your favorite soup.
