Skillet Burst Cherry Tomato and Garlic Pasta

This dinner feels fancy but is ready in thirty minutes. I like to add a handful of garlic breadcrumbs at the end for a little bit of crunch that ties everything together.
Ingredients
- 12 ounces spaghetti or linguine
- 2 pints cherry tomatoes
- 4 cloves garlic, thinly sliced
- 1/3 cup dry white wine
- 1/2 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 ball fresh burrata cheese
- 1/4 cup fresh basil leaves
- 1 tablespoon lemon zest
- Salt and black pepper to taste

Bring a large pot of salted water to a boil and cook your pasta according to the package directions.

While the pasta cooks, heat one tablespoon of olive oil in a large skillet over medium heat.

Add the breadcrumbs to the skillet and toast them until golden brown. Stir in the lemon zest and a pinch of salt, then remove the crumbs from the pan and set them aside.

In the same skillet, add the remaining oil and the cherry tomatoes. Cook them until they start to burst and soften.

Add the cooked pasta directly into the skillet with the tomatoes. Toss everything together so the sauce coats the noodles.

Divide the pasta into bowls, place a piece of fresh burrata on top of each serving, and sprinkle with the lemon breadcrumbs and fresh basil.

Store any leftover pasta in an airtight container in the fridge for up to two days. If you want to keep the breadcrumbs crunchy, store them in a separate jar and sprinkle them on right before you eat. This dish is best enjoyed warm with an extra drizzle of good olive oil.
