There is nothing quite like coming home to the smell of beef slow cooking in a rich, savory gravy. This recipe is a favorite in my house because it turns simple ingredients into a meal that feels like a special Sunday dinner, even on a busy weeknight.

My best advice is to use a good quality chuck roast and trim the fat before you start. The meat gets so tender that it falls apart on your fork, making it the perfect partner for a big pile of creamy mashed potatoes or buttered egg noodles.

Ingredients

  • 2 pounds beef chuck roast, cut into 1 inch cubes
  • 1 can condensed onion soup
  • 1 packet onion soup mix
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. 1

Place the cubed beef into your slow cooker.

  2. 2

In a medium bowl, whisk together the condensed onion soup, onion soup mix, water, Worcestershire sauce, and black pepper.

  3. 3

Pour the mixture over the beef and stir well to coat every piece.

  4. 4

Cover and cook on low for 6 to 8 hours, or until the beef is very tender.

  5. 5

In a small cup, stir the cornstarch and cold water together to make a smooth paste.

  6. 6

Stir the cornstarch mixture into the slow cooker, cover, and cook on high for another 15 to 20 minutes until the gravy has thickened.

  7. 7

    Serve warm over mashed potatoes.

๐Ÿ’ก Tips

These beef tips taste even better the next day after the flavors have had time to meld in the fridge. Store any leftovers in an airtight container for up to three days and reheat gently on the stove. If you have extra gravy, save it to pour over roasted vegetables.
