There is something so special about coming home to the smell of beef slow cooking in the kitchen. These shredded beef enchiladas are a favorite in our house because they are hearty and satisfy everyone at the table. You can use your slow cooker or a pressure cooker to get the meat perfectly tender before assembling the rolls.

My best advice is to warm your tortillas before you roll them. It keeps them from cracking when you add the filling, which makes the whole process much easier and keeps your enchiladas looking beautiful on the plate.

Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can red enchilada sauce
  • 1 can black beans, drained and rinsed
  • 12 corn or flour tortillas
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

    Place the beef, chopped onion, garlic, cumin, and chili powder in your slow cooker or pressure cooker.

    If using a slow cooker, cook on low for 8 hours. If using an Instant Pot, add a half cup of water and cook on high pressure for 60 minutes with a natural release.

    Remove the beef and shred it with two forks. Discard any excess fat.

    Preheat your oven to 375 degrees Fahrenheit.

    Pour a small amount of enchilada sauce into the bottom of a 9x13 baking dish.

    Warm the tortillas. Spoon a portion of the shredded beef, beans, and a sprinkle of cheese into each tortilla. Roll them up tightly and place them seam side down in the baking dish.

    Pour the remaining enchilada sauce over the top of the rolls and sprinkle with the rest of the cheese.

    Bake for 20 minutes or until the cheese is bubbly and melted.

Serve these with a dollop of sour cream, fresh cilantro, or sliced avocado. You can store leftovers in an airtight container in the fridge for up to three days, and they reheat beautifully in the microwave.
