Slow cooker Aloha chicken is one of my favorite meals to put together on a busy day. The combination of pineapple, onion, and barbecue sauce creates a wonderful Hawaiian flavor that makes the chicken taste absolutely delicious once it has finished cooking.

People love this dish because it is so easy to prepare and uses simple pantry staples. If you want to make the sauce a bit thicker, just whisk two tablespoons of cornstarch with one tablespoon of water and stir it into the pot for the last fifteen minutes of cooking.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 can (20 ounces) pineapple tidbits, drained and juice reserved
  • 1/2 yellow onion, thinly sliced
  • 3/4 cup BBQ sauce
  • 1/4 cup reserved pineapple juice
  • 1/3 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

    Lightly spray the inside of your slow cooker with nonstick cooking spray and place the chicken breasts inside.

    Add the sliced onion and the drained pineapple tidbits on top of the chicken.

    In a medium bowl, whisk together the BBQ sauce, reserved pineapple juice, brown sugar, soy sauce, garlic powder, and salt until smooth.

    Pour the sauce mixture over the ingredients in the slow cooker.

    Cover and cook on LOW for 5 hours or on HIGH for 3 hours.

    Once finished, use two forks to shred the tender chicken directly in the pot. Serve over warm rice and garnish with green onions if you like.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can reheat the chicken easily in the microwave or in a pan on the stove over medium heat. This dish is perfect for serving over steamed rice, inside soft rolls, or tucked into bowls.
