Slow Cooker Beef Stew

Ingredients
- 1.5 kg beef chuck, cut into 4 cm pieces
- 1/2 cup all purpose flour
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, cut into chunks
- 2 stalks celery, cut into chunks
- 500g small potatoes, left whole or halved
- 1 cup red wine
- 2 cups beef stock
- 1 beef bouillon cube
- 2 tablespoons tomato paste
- 3 sprigs fresh thyme
- 2 bay leaves

Toss the beef cubes in flour until coated, then shake off any excess.

Heat the oil in a large skillet over medium high heat and brown the beef in batches until deep golden brown on all sides.

In the same skillet, add the wine and scrape up the browned bits from the bottom. Let it simmer until the wine is reduced by half.

Pour the reduced wine into the slow cooker along with the beef stock, crumbled bouillon cube, tomato paste, onions, garlic, carrots, celery, potatoes, thyme, and bay leaves.
