There is nothing quite like a big scoop of cheesy potatoes to make a meal feel special. This recipe is a favorite in my house because the slow cooker does all the heavy lifting while you get back to your day.

My best tip is to use fresh shredded cheese instead of the pre bagged kind if you have time. The pre shredded bags are coated in starch to prevent sticking, and using a block of cheese will help your sauce stay much smoother and creamier.

Ingredients

  • 32 ounces frozen diced hash brown potatoes
  • 1 can condensed cream of chicken soup
  • 16 ounces sour cream
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

    Grease the inside of your slow cooker with a little butter or cooking spray.

    In a large mixing bowl, combine the condensed soup, sour cream, melted butter, garlic powder, onion powder, salt, and pepper.

    Stir in the shredded cheddar cheese until well combined.

    Add the frozen hash brown potatoes to the bowl and stir until they are evenly coated with the cheese mixture.

    Pour everything into the slow cooker and spread it out into an even layer.

    Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the potatoes are tender and the cheese is bubbly.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave or warm them in a baking dish in the oven. These are wonderful served alongside a holiday ham or simple roasted chicken.
