There is nothing quite like coming home to the smell of a warm, comforting meal waiting in the slow cooker. This chicken corn chowder is a favorite in my house because it is incredibly filling and requires very little effort to put together.

My secret for the best texture is to stir in the cream or milk right at the very end. It keeps the soup rich and silky without curdling during the long cook time.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 cups frozen corn kernels
  • 2 large potatoes, peeled and diced
  • 1 yellow onion, finely chopped
  • 3 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Instructions

    Place the chicken breasts, corn, potatoes, onion, chicken broth, thyme, salt, and pepper into your slow cooker.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and cooked through.

    Remove the chicken from the pot and shred it using two forks, then return the shredded meat to the slow cooker.

    Stir in the heavy cream and the cornstarch mixture to thicken the soup.

    Continue cooking on high for another 15 minutes until the chowder is hot and thickened to your liking.

Serve this chowder with a side of crusty bread or crackers to soak up the creamy broth. You can store leftovers in an airtight container in the fridge for up to three days.
