There is something so satisfying about letting your slow cooker do all the hard work for you. This curry chicken is a family favorite because the sauce gets so rich and creamy while the chicken stays tender and juicy.

I love serving this over a pile of steaming jasmine rice to soak up every last drop of that flavorful coconut sauce. If you want a little extra texture, feel free to add some chopped cashews or fresh cilantro right before serving.

Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs, cut into bite sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons yellow curry powder
  • 1 teaspoon ground turmeric
  • 1 can full fat coconut milk
  • 1 cup frozen peas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

    Place the chicken pieces into the bottom of your slow cooker.

    Add the onion, garlic, ginger, curry powder, turmeric, and a pinch of salt and pepper to the pot.

    Pour the coconut milk over the mixture and stir everything together until the chicken is well coated.

    Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours.

    Stir in the frozen peas during the last 15 minutes of cooking time.

    Serve warm over rice and top with fresh cilantro.

Store your leftovers in an airtight container in the fridge for up to three days. If the sauce thickens too much in the fridge, just add a tiny splash of water or coconut milk when reheating. This dish also freezes well if you want to keep a meal on hand for later.
