There is nothing quite like coming home to a warm meal waiting in the slow cooker. This cowboy casserole is a favorite in our house because it is filling, simple to prepare, and always hits the spot on a busy weeknight.

I love how the potatoes soak up all the savory juices from the sausage while they cook slowly throughout the day. It is a true crowd pleaser that is perfect for feeding a hungry family without spending hours in the kitchen.

Ingredients

  • 1 pound breakfast sausage
  • 4 large russet potatoes, peeled and cut into cubes
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

    Brown the sausage in a large skillet over medium heat until it is cooked through, then drain off the excess fat.

    Grease your slow cooker lightly with butter or nonstick spray.

    In a large bowl, mix together the cooked sausage, cubed potatoes, chopped onion, cream of mushroom soup, sour cream, and spices.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the potatoes are nice and tender.
