There is nothing better than coming home to a warm bowl of soup that practically cooked itself all day. This chowder is a family favorite because it combines bold southwestern flavors with a rich, velvety texture that keeps everyone coming back for seconds.

My best tip for this recipe is to add the cream cheese during the last hour of cooking. This prevents it from separating and ensures your soup stays perfectly smooth and creamy until it hits the bowls.

Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cans fire roasted corn, drained
  • 1 can black beans, rinsed and drained
  • 1 cup diced red bell pepper
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. 1

Place the shredded chicken, corn, black beans, bell pepper, onion, and garlic into your slow cooker.

  2. 2

Pour the chicken broth over the ingredients and add the cumin and chili powder.

  3. 3

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

  4. 4

About one hour before serving, stir in the softened cream cheese and shredded cheddar cheese until melted and smooth.

  5. 5

Season with salt and pepper to your preference and serve hot.

๐Ÿ’ก Tips

Serve this chowder topped with fresh cilantro, sliced avocado, or crushed tortilla chips for extra crunch. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat gently on the stove.
