This sweet potato casserole is a staple at my house during the holidays, but it is easy enough for a cozy Sunday dinner. Using the slow cooker frees up your oven space, which is a lifesaver when you are busy cooking other dishes.

I love how the sweet potatoes get so tender and flavorful while they cook slowly. Make sure to sprinkle the pecan topping right at the end so it stays nice and crunchy.

Ingredients

  • 3 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar for the topping
  • 2 tablespoons butter, softened for the topping

Instructions

    Place the cubed sweet potatoes into the bowl of your slow cooker.

    In a small bowl, whisk together the half cup of brown sugar, melted butter, vanilla, cinnamon, and salt.

    Pour this mixture over the sweet potatoes and toss them until they are well coated.

    Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the potatoes are very tender.

    Mash the potatoes directly inside the slow cooker using a potato masher.

    In a separate small bowl, combine the chopped pecans, the remaining brown sugar, and the softened butter.
