Smoky Chipotle Chicken

This chipotle chicken is a favorite in my kitchen because it packs so much flavor with very little effort. The combination of smoky spices and a quick broil gives the meat a beautiful charred finish that tastes just like it came off the grill.

It is incredibly versatile for busy weeknights. My best tip is to let the chicken sit in the marinade for at least thirty minutes if you have the time, as it really helps the spices sink into the meat.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 2 tablespoons chipotle peppers in adobo sauce, finely minced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lime juice

Instructions

    Preheat your oven broiler to high and place a rack about six inches from the heat source.

    In a medium bowl, whisk together the minced chipotle peppers, olive oil, garlic, cumin, paprika, salt, pepper, and lime juice.

    Add the chicken to the bowl and toss until every piece is well coated in the marinade.

    Place the chicken on a foil lined baking sheet in a single layer.

    Broil the chicken for 8 to 10 minutes, flipping halfway through, until it is cooked through and has nice charred edges.

    Remove the chicken from the oven and let it rest for five minutes before slicing or shredding for your tacos.

Serve this chicken with warm tortillas, fresh cilantro, and a squeeze of lime. If you have leftovers, keep them in an airtight container in the fridge for up to three days. It is delicious cold on top of a salad the next day.
