Smoky Chipotle Vinaigrette

dailyrecipesbook.comThis chipotle vinaigrette is one of my favorite dressings to keep in the fridge. It strikes the perfect balance between smoky, spicy, and just a hint of sweetness, making it a great way to wake up a standard salad or roasted vegetables.
I love using this on burrito bowls or drizzling it over grilled chicken. Since a little goes a long way, you can easily adjust the amount of chipotle pepper to suit your personal heat preference.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 chipotle pepper in adobo sauce
- 1 teaspoon honey
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
Instructions

Place the chipotle pepper, apple cider vinegar, honey, minced garlic, salt, and cumin into a blender or food processor.

Blend the ingredients until they are completely smooth.

With the blender running on low speed, slowly drizzle in the olive oil until the dressing is emulsified and creamy.

Taste your dressing and add more salt or honey if you think it needs it, then serve immediately or store it for later.

Store this dressing in a glass jar in the refrigerator for up to one week. If the olive oil solidifies when cold, just let the jar sit on the counter for ten minutes and give it a good shake before using.
