There is nothing quite like the smell of brown sugar cookies baking in the oven. These are a favorite in my house because they have those lovely crispy edges we all love, but the middle stays soft and chewy every single time.

My secret to getting that perfect texture is to make sure you do not overbake them. Pull them out of the oven when the edges are set, even if the centers still look a little bit soft. They will finish cooking on the warm tray.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

    Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

    In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

    Beat in the egg and the vanilla extract until fully combined.

    Slowly add the flour, baking soda, and salt to the wet ingredients and mix until just combined, being careful not to overwork the dough.

    Scoop rounded tablespoons of dough onto your prepared baking sheet, leaving about two inches between them.

    Bake for 10 to 12 minutes until the edges are golden brown but the centers are still soft.

    Let the cookies cool on the baking sheet for five minutes before moving them to a wire rack to cool completely.

Store these cookies in an airtight container at room temperature for up to five days to keep them soft. If you want to make them ahead, you can freeze the raw dough balls for up to three months and bake them straight from frozen.
