There is something truly comforting about a batch of molasses cookies cooling on the counter. They have that wonderful balance of a crisp edge and a soft, chewy center that everyone in the family seems to love.

My biggest tip for these cookies is to avoid overbaking them. You want to take them out of the oven when the edges are set but the centers still look a little bit soft. They will finish firming up perfectly as they cool on the tray.

Ingredients

  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/3 cup granulated sugar for rolling

Instructions

    Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.
