There is something so comforting about a classic chocolate chip cupcake. These are a favorite in my house because the cake is incredibly light and pairs perfectly with a tangy cream cheese frosting that balances out the sweetness.

I love adding a few crushed cookie crumbs on top for a little extra texture. If you want the best results, make sure your butter and eggs are at room temperature before you start mixing.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 cup semi sweet chocolate chips
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 4 chocolate sandwich cookies, crushed

Instructions

  1. 1

Preheat your oven to 350 degrees F and line a muffin tin with paper liners.

  2. 2

In a medium bowl, whisk together the flour, baking powder, and salt.

  3. 3

In a separate large bowl, cream together the half cup of butter and sugar until light and fluffy.

  4. 4

Beat in the eggs one at a time, then stir in the vanilla extract.

  5. 5

Slowly add the flour mixture to the wet ingredients, alternating with the milk, and mix until just combined.

  6. 6

Fold in the chocolate chips gently with a spatula.

  7. 7

Divide the batter evenly into the muffin liners and bake for 18 to 20 minutes or until a toothpick comes out clean.

  8. 8

While the cupcakes cool completely, beat the cream cheese and half cup of butter together until smooth.

  9. 9

Gradually add the powdered sugar and vanilla, whipping until the frosting is creamy.

  10. 10

Pipe or spread the frosting onto the cooled cupcakes and sprinkle the crushed cookie crumbs on top.

๐Ÿ’ก Tips

Store these cupcakes in an airtight container in the refrigerator since they contain cream cheese. They taste best if you let them sit on the counter for ten minutes before serving so the frosting softens up slightly.
