- Zest and juice of 1 lemon
- 1 tablespoon fresh parsley, minced
- 1 tablespoon scallion, sliced
- 2 tablespoons roasted red peppers, finely chopped
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon smoked paprika
- 1 egg, beaten
- 1/2 teaspoon kosher salt

- 4 ounces Manchego cheese, thinly sliced
- 4 brioche burger buns
- Aioli or brava sauce for serving
