Spicy Smashed Salmon and Broccoli Rice Bowls
This easy sheet pan dinner combines flaky salmon, charred broccoli, and a creamy spicy sauce for a perfect weeknight meal.
dailyrecipesbook.comThere is nothing quite like a sheet pan dinner when you want something healthy without spending all night in the kitchen. This salmon and broccoli bowl is one of my favorite go to meals because the clean up is minimal and the flavors are spot on.
I love how the salmon gets slightly crispy around the edges while the broccoli turns perfectly tender in the oven. The creamy spicy sauce brings everything together and adds a little kick that makes the whole dish feel like a treat.
Ingredients
- 2 salmon fillets
- 2 cups broccoli florets
- 2 cups cooked white or brown rice
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 3 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon soy sauce
- 1 teaspoon fresh lime juice
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
- 2
Place the salmon fillets and the broccoli florets on the baking sheet.
- 3
Drizzle everything with olive oil and sprinkle with garlic powder, salt, and pepper. Toss the broccoli gently to coat it evenly.
- 4
Bake for 12 to 15 minutes or until the salmon is cooked through and flakes easily with a fork.
- 5
While the fish cooks, stir together the mayonnaise, sriracha, soy sauce, and lime juice in a small bowl until smooth.
- 6
Once finished, use a fork to smash the salmon into smaller pieces directly on the tray.
- 7
Divide the cooked rice into two bowls, top with the smashed salmon and roasted broccoli, and drizzle the spicy sauce over everything.
๐ก Tips
Store any leftover salmon and broccoli in an airtight container in the fridge for up to two days. For a little extra crunch, top your bowls with some toasted sesame seeds or sliced green onions before serving.
