When the sun starts shining and the markets fill with fresh spring produce, I always crave something light and zesty for dinner. This pasta dish is a favorite in my home because it relies on simple ingredients that highlight the flavors of the season without feeling heavy.

My top tip for this recipe is to use the best olive oil you have on hand. Since the sauce is so simple, the quality of the oil really shines through in every single bite.

Ingredients

  • 12 ounces spaghetti or linguine
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 cup frozen peas, thawed
  • 1 large lemon, zested and juiced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

  3. 3

Add the minced garlic to the skillet and cook for about one minute until it becomes fragrant.

  4. 4

Stir in the peas and cook for two minutes until they are warmed through.

  5. 5

Reserve a half cup of the pasta cooking water, then drain the pasta.

  6. 6

Add the cooked pasta to the skillet with the garlic and peas.

  7. 7

Pour in the lemon juice, lemon zest, and half of the parmesan cheese.

  8. 8

Toss everything together, adding a splash of the reserved pasta water if the dish seems a little dry.

  9. 9

Season with salt and pepper, then top with the fresh parsley and remaining cheese before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. If you want to add more protein, grilled chicken or seared shrimp pair perfectly with these bright flavors.
