July is the best time of year to cook outside while the garden is full of beautiful vegetables. Everyone loves these skewers because they are simple to put together and bring out such a lovely sweetness in the bell peppers and zucchini.

My favorite trick for this recipe is to soak your wooden skewers in water for thirty minutes before you start. This keeps them from burning over the hot flames while your veggies get that perfect char.

Ingredients

  • 2 large zucchinis, sliced into thick rounds
  • 2 bell peppers, cut into 1 inch squares
  • 1 red onion, cut into chunks
  • 8 ounces halloumi cheese, cubed
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

    Soak your wooden skewers in water for at least thirty minutes so they do not burn.

    Whisk the olive oil, oregano, minced garlic, salt, and pepper in a small bowl.

    Thread the zucchini, bell pepper, onion, and halloumi onto the skewers in an alternating pattern.

    Brush the vegetable and cheese skewers generously with your olive oil mixture.

    Preheat your grill to medium high heat.

    Place the skewers on the grill and cook for about ten minutes, turning them occasionally, until the vegetables are tender and the cheese has nice grill marks.

Serve these skewers immediately while the cheese is warm and soft. If you have leftovers, take the veggies off the skewers and store them in an airtight container in the fridge for up to two days.
