There is something special about fresh corn when it gets a little charred in the oven. The sweetness of the kernels pairs perfectly with the crunch of bell peppers, making it a crowd favorite for any backyard barbecue.

My best tip is to make sure your pan is not too crowded. Giving the corn enough space allows it to roast rather than steam so you get those lovely golden brown edges.

Ingredients

  • 4 ears of fresh corn, kernels cut off the cob
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the corn kernels and diced bell peppers onto a large baking sheet.

  3. 3

Drizzle the olive oil over the vegetables and sprinkle with the chili powder, salt, and black pepper.

  4. 4

Toss everything together until the vegetables are well coated and spread them out in a single layer.

  5. 5

Roast for 20 to 25 minutes, stirring halfway through, until the corn is tender and slightly charred.

  6. 6

Remove from the oven, sprinkle with fresh cilantro, and serve with lime wedges on the side.

๐Ÿ’ก Tips

Leftovers store beautifully in an airtight container in the fridge for up to three days. You can serve this warm as a side dish or cold tossed into a fresh salad for a quick lunch the next day.
