Sun Dried Tomato Pesto Focaccia Grilled Cheese

Focaccia grilled cheese is my go to dinner when I want something comforting but special. The bread is already packed with sun dried tomatoes and parmesan which makes every bite so much better than standard sliced bread.

I love adding a generous layer of basil pesto to the inside because it pairs perfectly with the melted cheese. If you have some leftover focaccia from the weekend this is the best way to use it up.

Ingredients

  • 2 large squares of sun dried tomato and Parmesan focaccia
  • 2 tablespoons basil pesto
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded provolone cheese
  • 1/4 cup shredded fontina cheese
  • 1 tablespoon butter, softened

Instructions

    Slice your focaccia squares in half horizontally so you have a top and bottom piece for each sandwich.

    Spread a generous layer of basil pesto on the inside of both halves of each sandwich.

    Mix the mozzarella, provolone, and fontina cheeses together in a small bowl.

    Pile the cheese mixture onto the bottom half of the bread and place the top piece of focaccia over it.

    Spread the softened butter on the outside of the top and bottom bread slices.

    Heat a nonstick skillet over medium low heat. Place the sandwiches in the pan and cook for about 4 to 5 minutes on each side.

    Press down gently with a spatula while cooking until the bread is golden brown and the cheese is completely melted and gooey.

Serve these sandwiches alongside a small bowl of tomato soup for a classic meal. If you have any leftovers, store them in an airtight container and reheat them in a toaster oven to keep the bread crispy.
