There is something so comforting about a big bowl of lasagna, but sometimes you just do not want to spend hours layering noodles in the oven. This soup gives you that exact same flavor profile with much less fuss, making it perfect for those busy weeknights when you need a warm hug in a bowl.

My favorite thing about this recipe is how the sausage and tomato base comes together so quickly. Be sure to cook your pasta separately if you want to keep leftovers for a few days, because otherwise, the noodles will soak up all that delicious broth while sitting in the fridge.

Ingredients

  • 1 pound Italian sausage
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes, 28 ounces
  • 4 cups beef or chicken broth
  • 1 teaspoon dried oregano
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh basil for serving

Instructions

  1. 1

Heat a large pot or Dutch oven over medium heat and brown the sausage, breaking it apart with a wooden spoon.

  2. 2

Add the diced onion to the pot and cook until soft, then stir in the garlic and cook for another minute until fragrant.

  3. 3

Pour in the crushed tomatoes, broth, and oregano, then bring the mixture to a gentle simmer.

  4. 4

Add the broken lasagna noodles to the soup and cook for about 10 minutes or until the noodles are tender.

  5. 5

Turn the heat to low and stir in the heavy cream, mozzarella, and parmesan until the cheese is melted and the soup is creamy.

  6. 6

Ladle the soup into bowls and top with fresh basil before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you plan on freezing this, leave the cream and cheese out until you reheat it, as dairy can sometimes separate when frozen.
