My best tip for this recipe is to keep a bag of shelf stable gnocchi and a jar of quality pesto in your pantry at all times. It is the ultimate solution for those busy weeknights when you really do not want to cook.

Ingredients

  • 1 package shelf stable potato gnocchi
  • 1/2 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

    Bring a large pot of salted water to a boil.
