If you have never tried socca, you are in for a real treat. It is a savory pancake made from chickpea flour that gets wonderfully crispy and golden when cooked in a hot skillet with plenty of olive oil. It is a simple dish that feels fancy enough for guests but is easy enough for a quick weeknight meal.

This recipe is inspired by the famous street food found in Nice, France. It is naturally gluten free and relies on pantry staples like water, salt, and cumin. My best tip is to make sure your pan is truly hot before adding the batter so you get those beautiful, lacy crispy edges.

Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 1.5 tablespoons olive oil, plus extra for the pan
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Whisk the chickpea flour, water, olive oil, salt, cumin, and pepper in a medium bowl until the batter is completely smooth.

  2. 2

Let the batter rest on your counter for at least 30 minutes to allow the flour to hydrate.

  3. 3

Preheat your oven to 450 degrees Fahrenheit and place a 10 inch cast iron skillet inside to heat up.

  4. 4

Carefully remove the hot skillet from the oven and pour in about one tablespoon of olive oil to coat the bottom.

  5. 5

Pour the batter into the hot skillet and swirl it to ensure it covers the bottom evenly.

  6. 6

Bake for about 10 to 12 minutes until the edges are golden brown and crispy.

  7. 7

Switch your oven to the broiler setting for 2 to 3 minutes to char the top, then remove and serve immediately.

๐Ÿ’ก Tips

Serve your socca warm cut into wedges with a sprinkle of fresh herbs or a side of olives. If you have leftovers, store them in an airtight container in the fridge and reheat them in a hot skillet to bring back that crispy texture.
