Black sesame dan dan noodles are a Japanese version of the famous Sichuan dish. The black sesame paste gives the broth a deep, earthy flavor and a beautiful dark color that makes it stand out on your dinner table.

My favorite thing about this dish is how flexible it is. You can serve it steaming hot on a chilly night or rinse the noodles under cold water for a refreshing lunch during the summer months.

Ingredients

  • 2 servings of ramen noodles
  • 1/2 pound ground pork
  • 2 tablespoons black sesame paste
  • 1 tablespoon soy sauce
  • 1 tablespoon chili oil
  • 2 cups chicken or vegetable broth
  • 1 tablespoon sesame oil
  • 1 clove minced garlic
  • 1 teaspoon grated ginger
  • 2 stalks chopped green onions
  • 1 teaspoon sugar

Instructions

    Cook the noodles according to the package directions, then drain them well.

    In a pan over medium heat, brown the ground pork with the garlic and ginger.

    Add the soy sauce and sugar to the pork, stirring until the meat is cooked through and glazed.

If you want extra crunch, sprinkle some toasted white sesame seeds or crushed peanuts on top. You can keep leftovers in the fridge for up to two days, but store the broth and noodles separately so the noodles do not soak up all the liquid.
