There is something so comforting about a big bowl of noodles. This recipe is a staple in my house because it uses simple ingredients that you likely already have in your pantry and fridge, plus it comes together in a matter of minutes.

My best tip for success is to have all your ingredients chopped and measured before you turn on the stove. Since things move quickly in the pan, being prepared makes the process much more enjoyable and keeps the noodles from overcooking.

Ingredients

  • 8 ounces dried egg noodles
  • 2 tablespoons vegetable oil
  • 1/2 pound ground pork or chicken
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 2 cups shredded cabbage or coleslaw mix
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced

Instructions

    Cook the egg noodles according to the package directions until they are al dente, then drain them well and set aside.

    Heat one tablespoon of oil in a large skillet or wok over medium high heat.

    Add the ground meat to the pan and cook until it is browned and no longer pink.

    Push the meat to one side of the pan, pour the beaten eggs into the empty side, and scramble them until they are set.

    Add the remaining tablespoon of oil, the minced garlic, and the shredded cabbage to the pan.

These noodles taste best right out of the pan. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat them in a pan with a tiny splash of water to keep them from drying out.
