Blender Double Chocolate Spinach Muffins

- 2 large eggs
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/2 cup cocoa powder
- 1/4 cup hemp hearts
- 1/2 teaspoon baking soda
- 1/2 cup chocolate chips

Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.

Add the spinach, eggs, maple syrup, melted coconut oil, and vanilla extract to your blender. Blend on high until the spinach is completely smooth and no green flecks remain.

Add the almond flour, cocoa powder, hemp hearts, and baking soda to the blender. Pulse or blend on low speed just until the dry ingredients are fully combined.

Gently fold in most of the chocolate chips using a spoon or spatula.

Divide the batter evenly among the prepared muffin cups and sprinkle the remaining chocolate chips on top.
