This passion fruit chia pudding is one of my favorite things to make when I want something special but simple. The secret to the incredible, velvety texture is silken tofu, which blends perfectly with yogurt and fruit to create a treat that feels decadent but is actually quite healthy.

I love serving this for a quick breakfast or a midday pick me up. It is naturally filling, and the bright, tangy flavor of the passion fruit cuts through the creaminess beautifully. If you cannot find fresh passion fruit, frozen pulp works just as well.

Ingredients

  • 1/2 cup silken tofu
  • 1/2 cup vanilla yogurt
  • 1/4 cup passion fruit pulp
  • 2 tablespoons sweetened condensed milk
  • 3 tablespoons chia seeds

Instructions

    Add the silken tofu, vanilla yogurt, passion fruit pulp, and sweetened condensed milk into a blender.

    Blend the mixture on high speed until it is completely smooth and creamy.

    Pour the mixture into a bowl and stir in the chia seeds until they are well combined.

    Cover the bowl and place it in the refrigerator for at least two hours, or until the pudding has thickened to your liking.
