Easy Grilled Chicken Sandwiches with Dijon Marinade
These tender grilled chicken sandwiches are the perfect quick dinner for any night of the week.
dailyrecipesbook.comThere is nothing quite like a juicy chicken sandwich on a warm summer evening. By pounding the chicken breasts thin, the meat stays incredibly tender and cooks in just a few minutes on the grill. The Dijon marinade adds a lovely tang that really makes the flavors pop.
I love serving these for family dinners because everyone can customize their own toppings. If you want the best results, make sure you toast your buns until they are golden brown so the honey mustard does not soak into the bread.
Ingredients
- 2 boneless skinless chicken breasts
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 4 hamburger buns
- 4 tablespoons honey mustard
- 4 slices of lettuce
- 4 slices of tomato
- Salt and black pepper to taste
Instructions
- 1
Place the chicken breasts between two pieces of plastic wrap and pound them with a meat mallet until they are about half an inch thick.
- 2
In a small bowl, whisk together the Dijon mustard, olive oil, lemon juice, and oregano.
- 3
Put the chicken into a shallow dish or a plastic bag and pour the marinade over it. Let it sit in the fridge for at least 30 minutes.
- 4
Preheat your grill to medium high heat. Season the chicken with salt and pepper.
- 5
Grill the chicken for 3 to 4 minutes per side until it is cooked through and has nice char marks.
- 6
Remove the chicken from the heat and let it rest for a few minutes.
- 7
Toast your buns, spread a generous amount of honey mustard on each, and assemble with lettuce, tomato, and your grilled chicken.
๐ก Tips
Store any leftover chicken in an airtight container in the fridge for up to 3 days. If you are grilling for a crowd, you can prep the marinade and chicken the night before to save time. These sandwiches pair perfectly with a side of coleslaw or some crispy potato chips.
