This roasted chicken is a favorite in my kitchen because it is so easy to prepare. You just need a handful of fresh ingredients and a little bit of patience while it turns a beautiful golden brown in the oven.

My best tip is to let the chicken rest for ten minutes before you start carving it. This simple step keeps all the delicious juices inside the meat so every bite stays perfectly moist.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 3 cloves garlic, smashed
  • 1 lemon, halved
  • 3 sprigs fresh rosemary

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Remove the giblets from the chicken and pat the skin very dry with paper towels.
