This zucchini hamburger casserole is a staple in my kitchen because it is so comforting and simple to put together. It is a fantastic way to use up fresh zucchini while making sure everyone at the table leaves feeling full and happy.

My top tip for this recipe is to make sure you really sauté the zucchini until it is tender. This step is important because it draws out excess moisture and keeps your final casserole from turning out soupy in the pan.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 3 medium zucchini, sliced into half moons
  • 1 teaspoon dried Italian seasoning
  • 1 can 15 ounces tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

Heat the olive oil in a large skillet over medium heat.

  3. 3

Add the ground beef and onion to the skillet and cook until the meat is browned and the onion is soft.

  4. 4

Add the sliced zucchini and Italian seasoning to the skillet, then sauté for about 5 to 7 minutes until the zucchini begins to soften.

  5. 5

Stir in the tomato sauce and let it simmer for a few minutes. Season with salt and pepper to your liking.

  6. 6

Transfer the mixture into a medium baking dish.

  7. 7

Sprinkle the mozzarella and parmesan cheeses evenly over the top.

  8. 8

Bake for 20 minutes until the cheese is bubbly and starting to turn a light golden brown.

💡 Tips

You can store leftovers in an airtight container in the fridge for up to three days. This casserole pairs beautifully with a side of crusty garlic bread or a crisp green salad to round out the meal.
