When you have a busy weeknight ahead, this one pan meal is a total lifesaver. It combines tender chicken breasts with colorful fresh vegetables for a balanced dinner that takes the stress out of cooking.

My favorite thing about this dish is that you can swap in whatever vegetables are sitting in your fridge. It is a fantastic way to clear out the produce drawer while making sure everyone gets a healthy and delicious meal.

Ingredients

  • 2 large boneless skinless chicken breasts, cut into bite size pieces
  • 1 head of broccoli, cut into florets
  • 2 bell peppers, chopped
  • 1 medium zucchini, sliced
  • 1 small red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions
