There is something so comforting about the smell of a roasted chicken filling the kitchen. It is one of those dishes that feels special enough for a Sunday dinner but is easy enough to pull together when you are busy during the week.

My favorite thing about this recipe is how versatile it is. You can serve it with roasted potatoes and carrots for a complete meal that the whole family will love.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 3 tablespoons olive oil
  • 1 lemon, cut into wedges
  • 4 cloves garlic, smashed
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels to ensure the skin gets nice and crispy.

  3. 3

Place the chicken in a roasting pan or a large cast iron skillet.

  4. 4

Rub the olive oil all over the chicken, then season the skin with salt, pepper, rosemary, and thyme.

  5. 5

Stuff the cavity of the chicken with the lemon wedges and the smashed garlic cloves.

  6. 6

Roast in the oven for about 60 to 75 minutes, or until the juices run clear when you pierce the thigh.

  7. 7

Let the chicken rest for 15 minutes before carving to keep all the juices inside.

๐Ÿ’ก Tips

Store any leftover chicken in an airtight container in the fridge for up to three days. You can also use the leftover bones to make a delicious homemade chicken stock later in the week.
