There is something so satisfying about a warm, toasted tortilla filled with melty cheese and hearty chicken. These quesadillas bring a fun twist to your usual weeknight dinner by adding crispy bacon and a homemade ranch sauce that really makes the flavors pop.

I love making these when I need a quick meal that feels like a treat. The addition of sweet corn and a bit of buffalo sauce gives them just enough zing to keep things interesting. Don't forget to serve them with a fresh chopped salad on the side to round out your plate.

Ingredients

  • 2 cups cooked shredded chicken
  • 6 slices cooked bacon, chopped
  • 1 cup sweet corn kernels
  • 4 large flour tortillas
  • 2 cups shredded monterey jack cheese
  • 1/2 cup ranch dressing
  • 2 tablespoons buffalo sauce
  • 1 tablespoon butter
  • Fresh chopped salad for serving

Instructions

  1. 1

In a medium bowl, mix the shredded chicken with the ranch dressing and buffalo sauce until well coated.

  2. 2

Lay out your tortillas and sprinkle a layer of cheese over one half of each tortilla.

  3. 3

Top the cheese with the chicken mixture, chopped bacon, and corn.

  4. 4

Fold the tortillas in half to cover the filling.

  5. 5

Melt the butter in a large skillet over medium heat.

  6. 6

Place the quesadillas in the skillet and cook for about 3 to 4 minutes on each side until the tortillas are golden brown and the cheese is completely melted.

  7. 7

Remove from the heat, slice into wedges, and serve immediately with your favorite salad.

๐Ÿ’ก Tips

You can prep the chicken and bacon ahead of time to make dinner even faster on busy nights. If you have leftovers, keep them in an airtight container in the fridge and reheat them in a dry pan to get the tortilla crispy again.
