Fresh No Cook Summer Tomato Pasta

When summer tomatoes are at their peak, they are far too juicy and sweet to cook down. This sauce captures that garden fresh flavor by using a simple grating trick that creates a beautiful, rustic texture that clings perfectly to your favorite noodles.

Ingredients
- 1 pound ripe summer tomatoes
- 2 cloves garlic, minced
- 1/3 cup extra virgin olive oil
- 4 anchovy fillets, finely chopped
- 1/2 cup pitted olives, roughly chopped
- 2 tablespoons capers, drained
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon red pepper flakes
- 1 pound spaghetti or linguine
- Salt and black pepper to taste

While the pasta cooks, cut your tomatoes in half and grate the cut sides using the large holes of a box grater into a large bowl. Discard the remaining skins.
