Broccoli Quinoa Casserole

I love this dish because it is simple to assemble and perfect for meal prepping ahead of time. If you want to make it even more flavorful, try adding a sprinkle of sharp cheddar cheese or some toasted breadcrumbs on top before baking.
Ingredients
- 2 cups cooked quinoa
- 3 cups broccoli florets, chopped
- 1 cup Greek yogurt
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions

Preheat your oven to 375 degrees Fahrenheit and grease a medium baking dish.

Heat the olive oil in a pan over medium heat and sauté the onion and garlic until soft.

In a large mixing bowl, combine the cooked quinoa, sautéed onion, garlic, broccoli florets, Greek yogurt, eggs, and half of the shredded cheese.

Season the mixture with oregano, salt, and pepper then stir until everything is well combined.

Pour the mixture into your prepared baking dish and spread it out evenly.

Top with the remaining cheese and bake for 25 to 30 minutes until the edges are golden and the center is set.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave or place the whole dish in a warm oven until heated through.
